RARE,  found in the north end of  Fort Collins Old Town on College. Relatively upscale restaurant where you NEED a reservation (we booked two weeks out in early January) and can cut the pretentiousness with a knife! They are known for their Dry-Aged steak and meat and you can see it all hanging in a beauiful glass case. Walking in you are greeted and seated with no emotion, which could actually be an affect the hostesses develop from turning away so many walkin patrons. The Server was nice but DRY,  I guess like the meat. The restaurant was very clean in all asepcts and is certainly beautiful. If you want a UPSCALE DATE with the price tag this is the place. With my ear to the ground I have heard repeatedly that this is the burger to beat and I certainly was ready to see what the fuss was about. 

DRY-AGED Cheeseburger

This burger came out with a locally made bun, which turned out to be the best part of this burger. Soft, substantial, and toasted just right. Covered in Fontina Cheese with a bonus parmesan crisp that gave it a nice little salt taste, and for this dry burger it was needed. The mayo was good and had some flavor, adding needed creaminess. Arugula was soft and not worth it but was not slimy. Green tomatoes were not that good, it was on odd firmness at the bottom of the burger. Way too many red onions, almost an onion burger till I pulled them off.

The Meat: DRY-AGED 6oz. This was the driest burger I recall eating with no flavor at all. Mrs. Burger Mike, cover your ears: this burger reminded me of her attempts at quinoa burgers that literally fall apart when you move them.  The truffle fries would more accurately be names matchstick fries, definitely not my favorite and the did nothing to complement or salvage this burger.  They were fried perfectly but I forget how small and skinny these fries are and hard to eat.  Overall, the meal for $16.00 was overpriced to me and I feel like the atmosphere and size of food was really going to hurt their rating even though it is a nice place and to be fair burgers are but one menu item among dozens of italian offerings. If you want  a slam dunk burger from an Italian spot in Fort Collins, get yourself to Nick’s, you will not regret it.
