Blind Pig Pub

Located in downtown Fort Collins on Linden St. I have been wanting to try this place for a while and today on Game 2 of the Avalanche we walked in and found very friendly staff. There was outside seating and we sat inside. There are plenty of TVs for viewing. They warn us of the fact that it is going to get loud which it did all in FUN! LET’S GO AVS!! The waiter Donnie was outstanding and helped with everything I asked for. He knew I did not want a small glass…… He brought a huge cup of Ice Tea. The man knew! The cleanness for being a bar/Pig was super clean. Very impressed. 

Big Blu Burger

“Finally! This is the burger I have been waiting for.” was heard as soon as I finished the Big Blue burger at the Pig. Came out with a soft full brioche bun toasted just right and held onto the flavor of the meat so well. The blue cheese topping was spot on, not too heavy or weak just right and that is hard to do. Mixed with a chopped bacon and mixed in perfectly with the blue cheese almost like a jam but not and the bacon had a nice smoked flavor, adding depth to the overall bite. Then the special I was not expecting Fresh cut Jalapenos. Not too hot and they added a great unexpected flavor kick, pulling everything together. The Patty was an Angus beef that was seasoned so well that you could eat it by itself. The flavor that came from this patty was some of the best I have had in a while. HOLY COW!!! The buns held it so well. The thickness of the patty was about ¼ to ½ lb. and melted in your mouth. The fries were seasoned and coated, as a heads up these this type of fry can be a deal breaker for some people. I myself am a big fan of these and the BP has an outstanding chipotle aoili that is fabulous with the fries. It was ideal. They were not shy in the amount of fries which is a big plus! Overall the meal was well worth the price and I left FULL and may have left a few fries. For $16.00 it was well worth it plus the atmosphere was outstanding. Don’t miss this staple in Old Town next time you are up there.
